Grilled Carrots Topped with Basil Pesto


  • Carrots (peel carrot optional)
  • Slice carrots lengthwise
  • Toss carrots in olive oil, salt and pepper
  • Grill until softened


  • Pesto
  • 2 cups of basil
  • 2 Cloves of garlic
  • Olive Oil
  • Salt
  • Pepper
  • ½ of a Lemon
  • ½ cup of walnuts (or any nut of choice)


  • Directions
  • Put basil in a food processor
  • Add garlic, salt and pepper
  • Squeeze juice of half of a lemon
  • Start food processor and slowly add olive oil
  • Blend all ingredients well to a smooth consistency
  • Taste
  • Adjust taste if needed with more slat, pepper, lemon or olive oil


  • Drizzle pesto on top of grilled carrots and eat!


  • Optional: grill any vegetable inside of the CSA box including spring onions and top with basil pesto


Dill Cucumber Salad with Olive Oil Vinaigrette

  • Chop cucumbers
  • Chop dill
  • Mix together in a bowl


  • Olive Oil Vinaigrette
  • 1 part olive oil
  • 1 part raw apple cider vinegar
  • ½ tablespoon of mustard
  • ½ teaspoon of honey
  • 1 squeeze of a lemon
  • Whisk briskly until all ingredients are well blended
  • Salt and pepper to taste
  • Add vinaigrette to chopped cucumbers and dill mix gently


  • Optional: Add any other vegetables to this salad that are inside of the CSA box



Cabbage Rolls with Ground meat, Shredded Carrots and Cilantro


  • Meat (use ground meat of any choice including ground sausage)
  • Heat oil in pan add garlic and onion
  • Add ground meat
  • Season with salt and pepper
  • Set cooked meat aside


  • Cabbage
  • Gently remove cabbage leaves keeping them in tact
  • Fill leaves with ground meat, shredded carrots, and cilantro
  • Roll or fold cabbage leaf and eat!


  • Optional: blanch the cabbage leaves so that they are slightly softened add meat filing and add a sauce of any kind


  • Optional: add any fresh herbs you may have inside of the CSA box
